Chocolate Pecan Zucchini Muffins

Ingredients:

  • 2 1/3 cups flour
  • 1 1/4 cup sugar
  • 1/3 cup unsweetened cocoa powder
  • 2 tsp. baking powder
  • 1 1/2 tsp. ground cinnamon
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 cup sour cream
  • 1 tsp. vanilla flavoring
  • 1/2 cup vegetable oil
  • 2 eggs, beaten
  • 1/4 cup milk
  • 1 cup milk chocolate chips
  • 1/2 cup PLANTATION PECAN PIECES
  • 1 cup grated/shredded zucchini

    Line a muffin pan with 12 paper muffin cups. Combine first 7 ingredients in a large bowl. Combine sour cream, vanilla, oil, eggs and milk in a small bowl until blended, stirring into flour mixture just until moistened. Fold in chocolate chips, pecans and zucchini. Spoon into muffin cups, filling only 2/3 full. Bake at 400 degrees for 10 - 15 minutes or until toothpick inserted into centers comes out clean. Cool in the pan on wire rack for 5 minutes. Remove from pan. When completely cook, cover and store at room temperature.
